Sweet Bunny Cake

bunny cake

My daughter's 10th birthday fell on Easter that year, so I designed the cake with an Easter theme in mind. The cake was a butter box mix, (with a little cream added for moisture.) The cake was decorated with homemade Jack Frost icing piped on with a pastry bag, and accented with various candies, jellybeans, licorice, etc.

I baked it in two round pans, and cut out the shapes needed, (ears, snout, bow tie-optional) from one pan, and used the whole round cake for the face. The frosting was my own Jack Frost recipe, which is butter, powdered sugar, milk (or cream), and a bit of vanilla flavoring, (not sure of amounts, I usually start with a stick of butter, and add others until it is the right look/taste/consistency.

To frost with a furry texture it is easy, fill your pastry bag, and start with fat dollops that taper to a peak. Repeat until the cake is covered, then enjoy!!

P.S. I just added a little bit of red food coloring to a dish of icing to make the pink.

I baked three round cakes. I used two cakes for the head and the body, and cut the ears and paw shapes from the third cake. Ice the shapes and stick to the main cake body using icing.

Use black licorice strips for the whiskers, mouth, fingers and toes. I used Smarties candy for the eyes and nose and pink icing for the ears.
